Thai Pineapple Fried Rice

Ingredients:
2 cups Super Lucky Elephant Thai Hom Mali Jasmine Rice, cooked and cooled
1 cup diced pineapple
1 cup mixed vegetables (bell peppers, peas, onions), diced
1/2 cup shrimp or tofu
1/4 cup cashews
1/4 cup raisins
2 tablespoons curry powder
2 tablespoons soy sauce
1 tablespoon fish sauce
Preparation:
In a large skillet or wok, heat some oil over medium heat. Add the shrimp or tofu and cook until done.
Add the diced vegetables and sauté until tender.
Stir in the curry powder, then add the cooked jasmine rice, pineapple, cashews, and raisins.
Drizzle with soy sauce and fish sauce, and toss until everything is well combined and heated through.
