Coconut Jasmine Rice with Mango Salsa

Ingredients:
2 cups Super Lucky Elephant Thai Hom Mali Jasmine Rice
1 can coconut milk
1 large ripe mango, diced
1 small red onion, finely diced
1 jalapeño, seeded and minced
1/4 cup fresh cilantro, chopped
Juice of 1 lime
Preparation:
In a pot, bring the coconut milk to a boil. Add the jasmine rice, reduce heat to low, cover, and cook until the rice is tender and has absorbed the coconut milk.
While the rice is cooking, prepare the mango salsa: Combine the diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl.
Serve the cooked coconut rice topped with the mango salsa.
