Coconut Jasmine Rice with Mango Salsa

A delightful combination of sweet, spicy, and tangy flavors, this dish is perfect for a summer meal. The rice absorbs the rich, creamy coconut milk, giving it a luxurious taste and texture.

Ingredients:

  • 2 cups Super Lucky Elephant Thai Hom Mali Jasmine Rice

  • 1 can coconut milk

  • 1 large ripe mango, diced

  • 1 small red onion, finely diced

  • 1 jalapeño, seeded and minced

  • 1/4 cup fresh cilantro, chopped

  • Juice of 1 lime

Preparation:

  • In a pot, bring the coconut milk to a boil. Add the jasmine rice, reduce heat to low, cover, and cook until the rice is tender and has absorbed the coconut milk.

  • While the rice is cooking, prepare the mango salsa: Combine the diced mango, red onion, jalapeño, cilantro, and lime juice in a bowl.

  • Serve the cooked coconut rice topped with the mango salsa.
