Chicken and Vegetable Jasmine Fried Rice
Experience the aromatic fragrance of jasmine rice with tender chicken and colorful vegetables in this classic dish. It's a perfect one-pan meal for a quick weeknight dinner.
Ingredients:
2 cups Super Lucky Elephant Thai Hom Mali Jasmine Rice, cooked and cooled
2 chicken breasts, diced
1 cup mixed vegetables (carrots, peas, bell peppers), diced
2 cloves garlic, minced
2 eggs, beaten
2 tablespoons soy sauce
2 teaspoons sesame oil
Green onions for garnish
Preparation:
In a large skillet or wok, heat the sesame oil over medium heat. Add the diced chicken and cook until browned.
Add the minced garlic and diced vegetables. Sauté until the vegetables are tender.
Push the chicken and vegetables to one side of the skillet. Pour the beaten eggs into the other side and scramble.
Mix the eggs with the chicken and vegetables. Add the cooled jasmine rice, stirring to combine.
Drizzle with soy sauce and toss until everything is well coated. Garnish with green onions before serving
