Persian Saffron Rice Recipe
Ingredients:
2 cups basmati rice
4 cups water
1/4 cup olive oil
1 teaspoon saffron threads
2 tablespoons hot water
1 teaspoon salt
1/2 cup chopped pistachios
1/2 cup sliced and toasted almonds
1/4 cup raisins
1 teaspoon cinnamon powder
Instruction
Rinse the rice under cold water until the water runs clear. Soak the rice in water for 30 minutes.
While the rice is soaking, take the saffron threads and mix them with 2 tablespoons of hot water. Let it steep.
Boil 4 cups of water in a large pot. Add salt and the drained rice. Cook until the rice is almost done, about 10-12 minutes.
Drain the rice and set aside.
In a large skillet, heat the olive oil. Add the steeped saffron threads and cook for a couple of minutes.
Add the cooked rice to the saffron-infused skillet and gently mix to coat the rice with saffron.
Cover the skillet lid with a clean kitchen cloth and place the lid on top. Cook on very low heat for about 30 minutes to allow the rice to steam and absorb the flavors.
Meanwhile, in a small skillet, toast the almonds until golden.
When serving, fluff the rice gently. Then, garnish with pistachios, toasted almonds, raisins, and sprinkle cinnamon on top.
