Rice Cookie Tart
Ingredients
Rice Cookie:
• 1 cup of white rice
• 1 ½ cups of water
• Honey to taste
• Whipped cream
Topping
• Cherries
• Sliced peaches
Step-by-Step Instructions:
Let's start the recipe for these rice cookies by washing the rice several times to remove impurities.
Let it drain for a while.
Pour the one and a half cups of water into a pot and place it on the heat. When it starts to boil, add the rice and cook over medium heat for 18 minutes.
After that time, spread the rice on a tray and let it cool well.
While it reaches room temperature, preheat your oven to 180°C (356°F).
Once cool, divide the mixture and add honey.
Take small portions of the mixture, make a ball, and then flatten it into a cookie shape.
Place your cookies on a tray with parchment paper and bake for approximately 45 minutes.
After this time, remove from the oven and let them rest.
Topping:
Once the rice cookies are cool, add a little whipped cream on the edge of the cookie and in the center, decorate with the cherries, previously washed, and the peaches.
